Stellar Sparkling Wine is an effervescent wine produced in Sicily using Grillo grapes and an ancestral production method. Grillo is an indigenous Sicilian grape variety known to be used primarily for the production of dry white wines, but also for sparkling wines. These grapes produce wines with fresh, fruity aromas. The ancestral method, also called "traditional method" , is a method of producing effervescent wines in which the second fermentation takes place in the bottle. Instead of using modern technology to control fermentation, the effervescence in these wines is the result of natural fermentation of the sugar in the grapes.
