Tomatoes all'eoliana are a typical product of Lipari Island, an island in the Aeolian archipelago in Sicily. They are fresh tomatoes slowly cooked with garlic, basil and oregano in an earthenware pot to impart a unique and delicious flavor. They are used as a condiment for pasta, salads, meat and fish dishes, for making pickles and as an ingredient for making preserves and jams. Being a typical product of the Aeolian archipelago, Aeolian tomatoes are highly valued for their fragrance and intense flavor.
