Mortadella with Fennel

Mortadella with Fennel is a typical Sicilian cured meat, made by processing pork and flavored with Wild Fennel. Fennel is a typical plant of the Mediterranean maquis, which grows wild in uncultivated land and has an intense and characteristic aroma. The meat is minced fine and seasoned with spices, salt and fresh Wild Fennel, and then stuffed into natural casings. The mortadella is then cooked for a long time so that the meat is soft and tasty with an intense aroma and strong flavor. It is used as an appetizer or to season typical Sicilian dishes, or sliced as a snack.
