Donkey Mortadella

Mortadella d'Asina is a typical Sicilian cured meat product made by processing donkey meat. The meat is minced fine and then seasoned with spices and natural flavorings. The mortadella is then cooked for a long time in order to obtain a soft and tasty meat. Donkey mortadella has a stronger and more intense flavor than sheep mortadella, and is used in a variety of ways: as an appetizer or to season typical Sicilian dishes, or sliced as a snack. It is a traditional Sicilian product with a protected designation of origin, and production methods are strictly regulated.
