Lemon and Pistachio Mortadella

Lemon and Pistachio Mortadella is a typical Sicilian cured meat that combines the fresh, tart aroma of lemon with the delicate, slightly sweet flavor of pistachio. Finely ground pork is flavored with spices, garlic, lemon zest and finely chopped pistachios. The mixture is then packed into natural casings and steamed. The result is a uniquely flavored mortadella with a sweet and sour note and a soft texture. It is traditionally enjoyed as an appetizer or to accompany pasta dishes.
