Sheep Mortadella

Sheep mortadella is a typical Sicilian cured meat made from the processing of sheep thighs. It is seasoned with spices and natural flavorings, and then cured for a period of time that can vary from 2 to 8 weeks. Its meat is soft and delicate, with an intense but not too strong flavor. It is usually cut into thin slices and can be eaten as a snack or used to stuff sandwiches and hot dishes.
